Ingredients

  • 2 c. unsifted all-purpose flour
  • 2 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 c. carrots
  • 1 c. oil
  • 2 c. sugar
  • 3 eggs
  • 1 (8 oz.) can crushed pineapple and juice
  • 1 1/2 c. flaked coconut
  • 1/2 c. chopped nuts

Method

  • Sift the first 4 ingredients together and set aside.
  • Grate carrots and set aside.
  • Mix and cream the oil, sugar and eggs.
  • Add flour mixture to oil, sugar and eggs.
  • Add carrots, then stir in the pineapple, coconut and nuts.
  • Bake in a 9 x 13-inch pan at 350° for 50 to 60 minutes.
  • I find it best to add pineapple and juice to egg mixture before adding the flour.
