Ingredients
- 2 c. unsifted all-purpose flour
- 2 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 c. carrots
- 1 c. oil
- 2 c. sugar
- 3 eggs
- 1 (8 oz.) can crushed pineapple and juice
- 1 1/2 c. flaked coconut
- 1/2 c. chopped nuts
Method
- Sift the first 4 ingredients together and set aside.
- Grate carrots and set aside.
- Mix and cream the oil, sugar and eggs.
- Add flour mixture to oil, sugar and eggs.
- Add carrots, then stir in the pineapple, coconut and nuts.
- Bake in a 9 x 13-inch pan at 350° for 50 to 60 minutes.
- I find it best to add pineapple and juice to egg mixture before adding the flour.
