Ingredients

  • 1 cake yeast
  • 3 Tbsp. warm water
  • 1/2 c. sugar
  • 1/2 c. shortening
  • 1 tsp. salt
  • 1 1/2 c. boiling water
  • 2 eggs
  • 5 c. flour

Method

  • This makes 3 coffee cakes or about 60 rolls.
  • Dissolve yeast in warm water.
  • Dissolve sugar, shortening and salt in boiling water in small saucepan.
  • When cool, pour into large bowl.
  • Add yeast, eggs and 2 cups flour.
  • Beat with mixer until frothy.
  • Add 3 more cups of flour; mix well.
  • Cover with Saran Wrap and refrigerate overnight or until needed.
  • Will keep 7 to 10 days.
