- 3 c. flour
- 1 1/2 c. sugar
- 1 c. coconut (optional)
- 2 1/2 tsp. baking soda
- 2 1/2 tsp. cinnamon
- 1 tsp. salt
- 2 c. shredded carrots
- 1 c. applesauce
- 2 tsp. vanilla
- 1 tsp. lemon extract
- 11 oz. crushed pineapple
- egg substitute to equal 3 eggs
- 1/2 c. chopped nuts
Method
- Blend all ingredients, then beat 2 minutes at high speed. Pour into a Pam-sprayed 13 x 9-inch pan.
- Bake at 350° for about 55 minutes, until toothpick inserted comes out clean.
- Cool and frost with Fat-Free Cream Cheese Frosting.
