Ingredients

  • 3 c. flour
  • 1 1/2 c. sugar
  • 1 c. coconut (optional)
  • 2 1/2 tsp. baking soda
  • 2 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 2 c. shredded carrots
  • 1 c. applesauce
  • 2 tsp. vanilla
  • 1 tsp. lemon extract
  • 11 oz. crushed pineapple
  • egg substitute to equal 3 eggs
  • 1/2 c. chopped nuts

Method

  • Blend all ingredients, then beat 2 minutes at high speed. Pour into a Pam-sprayed 13 x 9-inch pan.
  • Bake at 350° for about 55 minutes, until toothpick inserted comes out clean.
  • Cool and frost with Fat-Free Cream Cheese Frosting.
