Ingredients

  • 8 eggs
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 1 1/4 c. cake flour
  • 8 egg whites
  • 1/2 tsp. cream of tartar
  • 1/2 tsp. salt
  • 1 c. sugar

Method

  • Beat together first 6 ingredients until very thick.
  • Stir in flour.
  • Beat egg whites, cream of tartar and salt until foamy. Slowly add 1 cup of sugar; beat until stiff glossy peaks form. Gradually beat yolk mixture into egg whites.
  • Pour into ungreased 10-inch tube pan.
  • Bake in 325° oven for 1 hour.
  • Invert cake to cool.
  • Cut cooled cake into 3 layers.
  • Dust top with confectioners sugar.
