Ingredients

  • 2 gal. cucumbers
  • 2 c. lime
  • 1 c. vinegar
  • 1/2 bottle red food coloring
  • 1 Tbsp. alum
  • 2 c. white vinegar
  • 2 c. cold water
  • 10 cinnamon sticks
  • 10 c. sugar
  • 19 oz. red hots candy

Method

  • Peel cucumbers 1/2-inch thick.
  • Soak 24 hours in lime to 2 gallons water.
  • Rinse lime off and soak 2 hours in cold water, then drain.
  • Mix 1 cup vinegar, red food coloring and alum.
  • Put in enough water to cover pickles and simmer for 1 hour, then drain.
  • Mix remaining ingredients.
  • Heat to boiling and pour over pickles and let stand overnight.
  • Heat for 3 days and on the third day, put into jars and seal.
