Ingredients

  • 4 Large eggs
  • 1 cup Almond Milk
  • 1/4 cup Grated Parmesan Cheese
  • 1 Nonstick spray (as needed)
  • 1/2 cup Shredded Mozzarella Cheese

Method

  • Preheat oven to 350; make sure a rack is in the middle-ish of the oven (just not the very top or the very bottom)
  • Beat together the eggs, almond milk, and parmesan cheese
  • Coat a 9x13 glass baking dish with nonstick spray (other sizes will work, will just effect number of servings and cook time)
  • Pour egg mixture into the dish and top with the shredded mozzarella cheese
  • Place baking dish into oven, uncovered, and cook anywhere from 30 mins to an hour depending on the size of the pan and thickness of the egg mixture. Check regularly with fork or toothpick inserted into the center of the pan. If it comes out pretty clean (nothing gooey), then it's done. Will likely rise up in the middle as it cooks and will sink back down as it cools. Better to overcook it a little than to undercook it. Top will be sort of golden brown and you will probably be able to smell it even when the oven door is closed.
  • Let cool COMPLETELY before covering and placing into fridge (condensation might make it get soggy)
  • Throw a piece in the microwave in the morning; time to reheat depends on size and thickness of the piece but typically no less than 30 seconds and no more than 90 seconds. Eat by itself or stack on pre-cooked meat (like sausage patties or lunch meat), cheese, and biscuit/toast for a breakfast sandwich.
