Ingredients

  • 2 Eggplant
  • 4 Zucchini
  • 1 Green pepper
  • 1 Onion (large)
  • 2 clove Garlic
  • 1 dash Parsley
  • 1 dash Thyme
  • 2 Bay leaf
  • 1 dash Salt
  • 1 dash Pepper
  • 3 tbsp Olive oil
  • 2 can Diced tomatoes (8 oz. can)
  • 1 pinch Cinnamon
  • 1 lb Ground Turkey

Method

  • Chop up onion and garlic cloves
  • Saute chopped onions and garlic cloves in olive oil in a pot
  • Add meat to the saute onions until meat is broken up (does not need to be fully cooked)
  • Cut up vegetables and add them to the saute
  • Add the rest of the ingredients to the pot and cook with lid on for 1.5 - 2 hours on medium heat
