- 1 7/16 cups fresh raspberries
- 7/8 cup caster sugar

Method
- 1 Whiz the raspberries in a liquidiser or food processor until completely smooth. Sieve into a bowl to get rid of the hard pips.
- Stir in the sugar, lemon juice and 150ml/ 1/4 pint of water.
- 2 Put in a plastic container and place in the freezer for three hours, stirring twice until the mixture is made up of large crystals but is not completely frozen.
