Ingredients

  • Sift together:
  • 2 1/4 C. all purpose flour
  • 1 tsp. baking soda
  • 1 tsp salt
  • Cream:
  • 1/2 C. butter
  • 1/2 C. butter-flavored shortening
  • 3/4 C. brown sugar
  • 3/4 C. granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 - 2 c. raspberry jam *
  • (can substitute any other flavor jam - apricot is also very good)

Method

  • Sift together dry ingredients and set aside. Cream butter, shortening and sugars; beat in eggs and vanilla. Combine with sifted ingredients.
  • Using wet hands, spread one half of dough into greased 9 X 13" pan. Spread jam on top of dough to within 1/2" of edges. With remaining dough, pat into circles and place atop jam to cover. Bake at 350 for 20-25 minutes until set. Allow to cool completely.
  • Make a glaze with 1 cup powdered sugar and 1/2 to 1 tsp water. Drizzle over cooled recipe in fancy design and cut into bars.
