Ingredients
- 8 slices Peppered Bacon, Cooked
- 1 whole Onion (small), Diced (optional)
- 1 jar Raspberry Chipotle Sauce
- 1 can Rotel Tomatoes (any Heat Level)
- 32 ounces, fluid Chicken Broth
- 6 cans Pinto Beans, Drained & Rinsed
Method
- 1. Fry up bacon until crisp; drain on paper towels. Save 1-2 T. of grease.
- 2. Place chopped onion in bacon grease and cook until translucent and soft.
- 3. In a large pot, combine all of the ingredients, except bacon. Bring to a simmer for about 30 minutes. (You may continue to cook the beans and reduce the liquid a bit, if desired.)
- 4. Coarsely chop bacon and mix into beans at the end of the cooking time.
- 5. Enjoy!
