Ingredients

  • 2 c. seedless raisins
  • 2 c. boiling water
  • 1/2 c. sugar
  • 2 Tbsp. flour
  • 1/2 c. chopped nuts
  • 2 tsp. grated lemon rind
  • 3 Tbsp. lemon juice
  • 2 pie shells

Method

  • Cook raisins in boiling water for 5 minutes or until tender. Stir in sugar and flour.
  • Cook over medium heat, stirring constantly until boiling.
  • Boil for 1 minute.
  • Remove from heat. Stir in nuts, lemon rind and lemon juice.
  • Pour into unbaked pie shell and cover with a top crust which has slots cut in it.
  • Bake until brown at 425° for 30 to 45 minutes.
  • Serve warm.
