Ingredients
- 2 c. flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/2 c. shredded carrots
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 1 (8 oz.) can crushed pineapple with juice
- 2 eggs, beaten
- 1/2 c. butter, melted
- 1 tsp. vanilla
Method
- Beat eggs until frothy; add dry ingredients and blend.
- Fold in the carrots, raisins, walnuts and pineapple.
- Pour into prepared muffin cups.
- Bake 20 to 25 minutes at 375°.
- Makes 1 dozen.
