Ingredients
- 5 c. all-purpose flour
- 5 tsp. baking powder
- 7 1/2 c. Raisin Bran cereal
- 1 c. vegetable oil
- 4 c. buttermilk
- 4 eggs, beaten
Method
- Blend all dry ingredients together in a large bowl. Add buttermilk, oil and eggs.
- Blend until all ingredients are moistened. (Do not stir batter again.)
- Mixture may be stored in the refrigerator for up to 6 weeks in covered nonmetal containers. Use as needed.
- Bake in muffin tins at 400° for 10 to 20 minutes. Yields 4 dozen muffins.
