Ingredients
- 1 (15 oz.) box Raisin Bran cereal
- 5 c. all-purpose flour
- 3 c. sugar
- 1 Tbsp. plus 2 tsp. baking soda
- 2 tsp. salt
- 4 well beaten eggs
- 1 c. vegetable oil
- 1 qt. buttermilk
- 1 c. raisins
Method
- Combine the first 5 ingredients in a very large bowl.
- Add raisins (optional).
- Make well in center and pour in eggs, buttermilk and oil.
- Stir until mixed.
- Cover; store up to 6 weeks in refrigerator.
- Bake at 400° for 12 to 15 minutes in muffin pan.
