Ingredients

  • 2 1/4 c. uncooked oat bran
  • 1/2 c. raisins or 2 small apples, peeled and chopped fine
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 large egg whites
  • 1 c. unsweetened applesauce
  • 1/2 c. packed brown sugar
  • 1/2 c. plain no fat yogurt
  • 2 Tbsp. vegetable oil

Method

  • Spray muffin tins or use paper liners.
  • Mix first 6 ingredients in large bowl.
  • Mix other ingredients together except yogurt.
  • Mix with oat mixture.
  • Stir in yogurt.
  • Spoon into muffin pans.
  • Bake at 350° for 30 to 35 minutes.
  • Makes 12.
