Ingredients

  • 1/2 c. butter
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 3 Tbsp. instant coffee
  • 2 tsp. vanilla extract
  • 2 eggs
  • 2/3 c. milk
  • 1 3/4 c. flour
  • 1/2 tsp. salt
  • 1 Tbsp. baking powder
  • 3/4 c. semi-sweet chocolate chips
  • 1 1/2 c. chopped walnuts

Method

  • Preheat oven to 350°.
  • Grease and flour 12 (3-inch) muffin tins.
  • Cream together the butter, sugars, coffee and vanilla. Beat together eggs and milk. Combine flour, salt and baking powder. Alternately add wet and dry ingredients to butter mixture. Stir just to combine.
  • Add chips and nuts by hand. Fill muffin tins. Bake 20 to 25 minutes.
  • Cool 5 minutes in tins, then remove and continue cooling on racks.
