Ingredients

  • 1 cottontail
  • 1/2 c. celery
  • 1 bay leaf
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 2 c. water
  • 1 tsp. salt
  • 1 Tbsp. Worcestershire sauce
  • 12 pitted olives
  • fresh parsley
  • 1/4 c. onion

Method

  • Chop celery and onion.
  • Put cleaned rabbit in baking pan with chopped vegetables and bay leaf.
  • Roast at 350° for 45 minutes. Remove rabbit and add butter and flour to drippings.
  • Cook until brown.
  • Add water, salt, olives and Worcestershire sauce.
  • Stir and replace meat.
  • Bake another 45 minutes at 350°.
  • Garnish with parsley.
