Ingredients
- 1 cottontail
- 1/2 c. celery
- 1 bay leaf
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 c. water
- 1 tsp. salt
- 1 Tbsp. Worcestershire sauce
- 12 pitted olives
- fresh parsley
- 1/4 c. onion
Method
- Chop celery and onion.
- Put cleaned rabbit in baking pan with chopped vegetables and bay leaf.
- Roast at 350° for 45 minutes. Remove rabbit and add butter and flour to drippings.
- Cook until brown.
- Add water, salt, olives and Worcestershire sauce.
- Stir and replace meat.
- Bake another 45 minutes at 350°.
- Garnish with parsley.
