Ingredients

  • 4 bell peppers cut in halves
  • 1 cup cooked quinoa
  • 1 can black beans
  • 1 can diced tomatoes
  • 1 can corn
  • 1 small yellow onion
  • 1 clove garlic
  • Low sodium taco seasoning
  • 1 Lime

Method

  • I just browned the onion & minced garlic.. Mixed that in with the cooked quinoa & other veggies & seasoning. Oiled the pan and placed the peppers in it, then filled them up with the quinoa mixture. I squeezed lime juice of 1/2 lime over top & Baked for 25-30 minutes at 350 degrees.
  • When finished I topped with greek yogurt and decided to skip the cheese.
