Ingredients
- 4 bell peppers cut in halves
- 1 cup cooked quinoa
- 1 can black beans
- 1 can diced tomatoes
- 1 can corn
- 1 small yellow onion
- 1 clove garlic
- Low sodium taco seasoning
- 1 Lime
Method
- I just browned the onion & minced garlic.. Mixed that in with the cooked quinoa & other veggies & seasoning. Oiled the pan and placed the peppers in it, then filled them up with the quinoa mixture. I squeezed lime juice of 1/2 lime over top & Baked for 25-30 minutes at 350 degrees.
- When finished I topped with greek yogurt and decided to skip the cheese.
