Ingredients

  • 1 16 oz. box penne pasta
  • 1 can artichoke hearts, drained and chopped roughly
  • 3 tablespoons virgin olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon red pepper flakes
  • 2 cups shredded mozzarella or havarti cheese
  • 1/4 cup pine nuts, browned in a dry skillet

Method

  • Work QUICKLY -- everything needs to be mixed while the pasta is hot so that the last item--the cheese-- will melt!
  • Have everything prepared before you cook the pasta!!
  • 1. boil the pasta until al dente
  • 2. drain and coat pasta with olive oil
  • 3. throw in artichokes, garlic, red pepper and browned pine nuts
  • TOSS GENTLY BUT THOROUGHLY.
  • 4. Quickly add the cheese and toss quickly.
  • To aid in melting you can replace the lid to the pot--serve as soon as the cheese melts!!
