Ingredients

  • 3/4 c. vanilla wafer cookie crumbs, divided
  • 3 egg yolks, beaten
  • 1/4 c. lime juice
  • 1 tsp. grated lime peel
  • 1/2 c. sugar
  • 1 1/2 c. plain yogurt
  • 1 c. whipped cream, beaten with 2 Tbsp. sugar until stiff

Method

  • Lightly spray a small shallow glass dish with nonstick cooking spray.
  • Sprinkle dish with half the crumbs.
  • Mix together egg yolks, lime juice, peel and sugar in top of double boiler over boiling water.
  • Stir occasionally until thick.
  • Set mixture off heat.
  • Cool and add yogurt and whipped cream to cooled lime mixture.
  • Pour over crumbs into dish.
  • Top with remaining crumbs. Cover and freeze until firm.
  • Serve cut into squares.
