- 1 tsp. olive oil
- 1 medium onion
- 4 clove garlic
- 1 can fava beans
- 1 medium yellow summer squash
- 2 3/4 c. beef stock
- 2 c. diced plum tomatoes
- 4 oz. Canadian bacon
- 1 tsp. Italian herb seasoning
- 1 tsp. red wine vinegar
- Salt and pepper to taste
Method
- Heat the oil in a 6-quart pot over medium-high heat.
- Add the onion and garlic and saute until the onion is golden.
- Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar.
- Cover and bring to a boil.
- Reduce the heat and simmer until the squash is tender, about 15 minutes.
- Taste and season with salt and pepper if needed.
