Ingredients

  • 1 tsp. olive oil
  • 1 medium onion
  • 4 clove garlic
  • 1 can fava beans
  • 1 medium yellow summer squash
  • 2 3/4 c. beef stock
  • 2 c. diced plum tomatoes
  • 4 oz. Canadian bacon
  • 1 tsp. Italian herb seasoning
  • 1 tsp. red wine vinegar
  • Salt and pepper to taste

Method

  • Heat the oil in a 6-quart pot over medium-high heat.
  • Add the onion and garlic and saute until the onion is golden.
  • Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar.
  • Cover and bring to a boil.
  • Reduce the heat and simmer until the squash is tender, about 15 minutes.
  • Taste and season with salt and pepper if needed.
