Ingredients

  • 4 each chicken breast halves, boneless, skinless
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup seasoned dry bread crumbs
  • 1/2 cup parmesan, parmigiano-reggiano cheese, grated
  • 8 ounces mozzarella cheese fresh
  • 16 ounces spaghetti sauce
  • 1 x salt and black pepper to taste

Method

  • Combine bread crumbs and parmesan cheese together on a large plate and mix well.
  • Heat oil and butter in large oven safe skillet on stove top over medium-high heat until butter is melted and oil begins to shimmer.
  • Season each chicken breast on both sides with salt and pepper.
  • Dredge chicken in bread crumb and cheese mixture and lay carefully away from your body into the hot skillet.
  • Cook chicken on one side until golden brown (about 4 to 5 minutes).
  • Carefully turn chicken and continue cooking.
  • Slice mozzarella into 1/2 inch thick slices, place on top of cooked chicken and spoon spaghetti sauce over top.
  • Place pan in pre-heated 350F (180C) oven for 10 minutes or until cheese begins to melt and sauce is bubbly.
  • Carefully remove from oven, serve alone or with a side of pasta and grated parmesan cheese.
