- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 (15 ounce) can pumpkin
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 12 teaspoon salt
- 12 teaspoon ground ginger
- 14 teaspoon ground cloves
- 12 cup dried cranberries
- 1 (16 ounce) can cream cheese frosting (or 2 cups homemade)
Method
- Heat oven to 350.
- Beat eggs, sugar, oil and pumpkin in large bowl.
- Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves, just until combined.
- Stir in cranberries.
- Spread in greased 15 x 10 x 1 inch pan.
- Bake 25 to 30 minutes or until a toothpick inserted near the center comes out clean; cool completely.
- Frost with Cream Cheese Frosting.
