Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 (15 ounce) can pumpkin
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 12 teaspoon ground ginger
  • 14 teaspoon ground cloves
  • 12 cup dried cranberries
  • 1 (16 ounce) can cream cheese frosting (or 2 cups homemade)

Method

  • Heat oven to 350.
  • Beat eggs, sugar, oil and pumpkin in large bowl.
  • Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves, just until combined.
  • Stir in cranberries.
  • Spread in greased 15 x 10 x 1 inch pan.
  • Bake 25 to 30 minutes or until a toothpick inserted near the center comes out clean; cool completely.
  • Frost with Cream Cheese Frosting.
