Ingredients
- 1 small pumpkin shell
- 2 c. peeled chopped apples
- 1 c. raisins
- 1 c. chopped pecans
- 1/3 c. sugar
- 1 tsp. lemon juice
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
Method
- Preheat oven to 350°.
- Wash and dry pumpkin (approximately 7-inches in diameter; you can use larger, but it takes longer to cook and you may have trouble removing it from cookie sheet.)
- Fill pumpkin with two parts apples, one part raisins and one part pecans.
- Add sugar to taste.
- Add lemon juice, cinnamon and nutmeg. Mix well.
- Return lid to pumpkin.
- Place pumpkin on a cookie sheet. Bake until apples are tender.
- Begin checking after 40 minutes, but it may take up to 1 hour and 45 minutes longer.
- This casserole may be served hot or cold.
- Serve from the shell, spooning some pumpkin with each portion.
- Top with sour cream if desired.
- Serves 6 to 8.
