Ingredients

  • 1 small pumpkin shell
  • 2 c. peeled chopped apples
  • 1 c. raisins
  • 1 c. chopped pecans
  • 1/3 c. sugar
  • 1 tsp. lemon juice
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg

Method

  • Preheat oven to 350°.
  • Wash and dry pumpkin (approximately 7-inches in diameter; you can use larger, but it takes longer to cook and you may have trouble removing it from cookie sheet.)
  • Fill pumpkin with two parts apples, one part raisins and one part pecans.
  • Add sugar to taste.
  • Add lemon juice, cinnamon and nutmeg. Mix well.
  • Return lid to pumpkin.
  • Place pumpkin on a cookie sheet. Bake until apples are tender.
  • Begin checking after 40 minutes, but it may take up to 1 hour and 45 minutes longer.
  • This casserole may be served hot or cold.
  • Serve from the shell, spooning some pumpkin with each portion.
  • Top with sour cream if desired.
  • Serves 6 to 8.
