Ingredients

  • 3 eggs
  • 2/3 c. pumpkin
  • 1 c. sugar
  • 1 t. baking soda
  • 1/2 t. cinnamon
  • 3/4 c. plain flour
  • chopped pecans, optional
  • 2 T. soft butter
  • 8 oz. cream cheese softened
  • 1 c. powdered sugar
  • 3/4 t. vanilla

Method

  • Grease a 10x15 cookie sheet and line with waxed paper.
  • Mix first six ingredients together in medium bowl.
  • Pour mixture in cookie sheet and sprinkle with chopped pecans.
  • Bake at 350 degrees for 15 min.
  • Turn onto a towel sprinkled with powdered sugar and roll it up in the towel a few times while warm (for flexibility).
  • Let cool, remove waxed paper and cover with filling.
  • For filling, mix butter, cream cheese powdered sugar and vanilla.
  • Beat until smooth.
  • Spread over pumpkin mixture after cool.
  • Roll up like a jelly roll and wrap in foil.
  • Keep refrigerated.
  • Will keep for weeks.
  • Can be frozen.
