- 2 eggs
- 1 1/4 c. sugar
- 1/2 c. oil
- 1 tsp. baking soda
- 1/2 tsp. allspice
- 1 (16 oz.) can (2 c.) pumpkin pie filling
- 3 Tbsp. water
- 1 3/4 c. flour
- 3/4 tsp. salt
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 3/4 c. raisins
- 1/2 c. nuts (optional)
Method
- Beat eggs slightly; gradually add sugar, oil, water and pumpkin.
- Stir in flour, baking soda, salt, spices, raisins and nuts (if you are using them).
- Grease 1 1/2 dozen muffin cups and fill 3/4 full.
- Bake at 400° for 25 to 30 minutes.
