Ingredients

  • 2 eggs
  • 1 1/4 c. sugar
  • 1/2 c. oil
  • 1 tsp. baking soda
  • 1/2 tsp. allspice
  • 1 (16 oz.) can (2 c.) pumpkin pie filling
  • 3 Tbsp. water
  • 1 3/4 c. flour
  • 3/4 tsp. salt
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 3/4 c. raisins
  • 1/2 c. nuts (optional)

Method

  • Beat eggs slightly; gradually add sugar, oil, water and pumpkin.
  • Stir in flour, baking soda, salt, spices, raisins and nuts (if you are using them).
  • Grease 1 1/2 dozen muffin cups and fill 3/4 full.
  • Bake at 400° for 25 to 30 minutes.
