- 5 pounds sea salt
- 2 teaspoons whole peppercorns
- 1 tablespoon brown sugar firmly packed
- 1 teaspoon juniper berries dried
- 1 bay leaf dried, crumbled
- 6 thyme sprigs of, leavesonly
- 8 cloves whole
Method

- Mix well then crush or pound in a mortar and use as Salt in brines or for dry Salting.
