Ingredients

  • 3/4 c. instant nonfat dry milk
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 8 pkg. Sweet 'N Low
  • 6 Tbsp. flour
  • 1 tsp. baking soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. pumpkin
  • 1/2 c. grated carrots
  • 4 Tbsp. raisins

Method

  • Sift dry ingredients in separate bowl.
  • Combine eggs and vanilla.
  • Add pumpkin and mix well.
  • Add dry ingredients, carrots and raisins.
  • Spray 12 cup muffin tin with nonstick spray.
  • Fill and bake at 350° for 20 minutes.
  • Two servings (6 each) = 1 bread, 1 protein, 1 milk and 1 fruit.
