- 1 (16 oz.) can pumpkin
- 4 oz. white enriched bread
- 4 med. eggs
- 1-1/3 c. nonfat dry milk
- 1-1/2 tsp. cinnamon
- 1-1/3 tsp. baking soda
- artificial sweetener to equal 2 Tbsp. sugar
- 2-1/2 Tbsp. brown sugar replacement
- 1 tsp. vanilla
Method
- Mix eggs, baking soda, pumpkin and vanilla together.
- Put rest of ingredients in separate bowl.
- Add dry ingredients to wet ingredients a little at a time and beat on low speed with mixer. Bake at 350° for 30 minutes.
- Makes 12 cupcakes.
- Serves 4.
