Ingredients

  • 1 (16 oz.) can pumpkin
  • 4 oz. white enriched bread
  • 4 med. eggs
  • 1-1/3 c. nonfat dry milk
  • 1-1/2 tsp. cinnamon
  • 1-1/3 tsp. baking soda
  • artificial sweetener to equal 2 Tbsp. sugar
  • 2-1/2 Tbsp. brown sugar replacement
  • 1 tsp. vanilla

Method

  • Mix eggs, baking soda, pumpkin and vanilla together.
  • Put rest of ingredients in separate bowl.
  • Add dry ingredients to wet ingredients a little at a time and beat on low speed with mixer. Bake at 350° for 30 minutes.
  • Makes 12 cupcakes.
  • Serves 4.
