Ingredients

  • 1 clove Garlic, Peeled
  • 1/2 whole Lemon, Juice Only
  • 2 Tablespoons Tahini
  • 1 Tablespoon Extra Virgin Olive Oil
  • 4 cups Canned Chickpeas, Rinsed And Drained
  • 2 cups Canned Pumpkin Puree
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • Salt To Taste

Method

  • 1.
  • Into the bowl of a food processor, add the garlic, lemon juice, tahini and olive oil and pulse until smooth.
  • Add the chickpeas and pulse until smooth.
  • Add the pumpkin (using more or less depending on the desired consistency of the hummus) along with the cumin, paprika and salt; pulse until smooth and evenly combined.

  • Serve with endive spears, celery sticks, carrots and/or crackers.
