Ingredients
- 1 c. brown sugar
- 1/2 c. shortening
- 1 egg
- 1 c. canned pumpkin
- 1 tsp. soda
- 1 tsp. baking powder
- 2 c. flour
- 1 tsp. vanilla
- 1 c. cut-up dates
- 1 c. chopped nuts
Method
- Cream sugar and shortening together.
- Add beaten egg and pumpkin.
- Sift soda, baking powder and flour together.
- Add vanilla, dates and nuts.
- Fill muffin tins 1/2 to 2/3 full.
- Bake 20 minutes in 325° oven.
- Makes 24 muffins.
