Ingredients
- 1 34 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 12 teaspoon allspice
- 1 cup pumpkin
- 12 cup oil
- 2 eggs
- 1 12 cups cranberries, coarsely chopped (fresh or frozen)
Method
- Preheat oven to 350.
- Grease and flour an 8x4 loaf pan.
- Combine dry ingredients in a medium mixing bowl.
- In another bowl, combine remaining ingredients, except cranberries.
- Add wet ingredients to dry ingredients, stirring just until dry ingredients are moist.
- Stir in cranberries.
- Spread evenly in a loaf pan.
- Bake 1 1/2 hours or until a toothpick inserted into the center of the bread comes out clean.
- Remove from pan.
- Cool completely on a wire rack.
