Ingredients

  • 1 c. shortening or butter
  • 1/2 c. light brown sugar
  • 1/2 c. granulated sugar
  • 1 c. canned pumpkin
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. chopped nuts

Method

  • Preheat oven to 350°.
  • Cream butter or shortening and sugar together.
  • Add pumpkin, egg and vanilla; mix well.
  • Add sifted dry ingredients; blend well.
  • Add nuts.
  • Drop from teaspoon onto an ungreased cookie sheet.
  • Bake for 10 to 12 minutes.
  • Cool and frost.
  • Makes 6 1/2 dozen.
