- 1 cup sugar
- 12 cup brown sugar
- 1 cup canned pumpkin
- 12 cup oil (I use light olive oil)
- 2 eggs
- 1 teaspoon baking soda
- 12 teaspoon salt
- 12 teaspoon nutmeg
- 12 teaspoon cinnamon
- 14 teaspoon ginger
- 2 cups flour
- 12 ounces chocolate chips
- 12 cup walnuts, chopped
Method
- Combine first 10 ingredients until blended.
- Add flour mix well.
- Stir in chocolate chips and walnuts.
- Spoon into well oiled 9"x5"x3" loaf pan.

- Bake at 350 degrees for 65 -75 minutes or until done when tested.
- * Or 1 batch = 4 mini loaves.
- Bake mini loafs 45 minutes.
