Ingredients

  • 1 c. brown sugar
  • 1/4 c. salad oil
  • 2 eggs
  • 3/4 c. flour
  • 3/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. cinnamon
  • 1/2 c. minced dates
  • 1/2 c. chopped nuts
  • 2/3 c. canned pumpkin

Method

  • Preheat oven to 350°.
  • Mix sugar, oil and eggs.
  • Add dry ingredients alternately with pumpkin, then add nuts and dates. Pour into greased 9 x 9 x 2-inch pan and bake for 30 minutes at 350°.
  • Cool 5 minutes before removing from the pan to a cooling rack.
  • Allow to cool and frost.
  • Makes 2 2/3 dozen bars.
  • These make a complete fall dessert.
  • They may be topped with whipped cream instead of frosting.
