Ingredients

  • 12 large shrimp, cooked and cleaned
  • 2 tablespoons lime juice
  • 12 honeydew melon, cut in 12 wedges (if you prefer you can use quartered fresh figs instead)
  • 12 slices prosciutto, small- medium
  • 1 cup mango salsa, see other recipe (Simple Mango Salsa)

Method

  • Toss the shrimp with the lime juice, and let sit for 5 minutes.
  • Pair each shrimp with a slice of honeydew melon (or fig).
  • Wrap prosciutto around the fruit and the shrimp.
  • Spoon Mango salsa over top and serve.
