Ingredients

  • 1/2 c. plus 4 Tbsp. seasoned dry bread crumbs, divided
  • 1 head cauliflower, cut into flowerets
  • water
  • 2 eggs, beaten
  • 1/2 c. plus 2 Tbsp. grated Parmesan cheese, divided
  • 1 (8 oz.) pkg. Mozzarella, diced
  • 1 (15 oz.) Ricotta cheese
  • 2 oz. hard salami, diced
  • ground pepper to taste
  • 1/2 tsp. salt or to taste

Method

  • Preheat oven to 350°.
  • Grease 12 x 8-inch baking dish. Sprinkle lightly with 1/2 cup bread crumbs.
  • In large saucepan over medium-high heat, bring cauliflowerets and enough water to a boil.
  • Cook 10 minutes or until tender.
  • Drain; with fork crush cauliflower into smaller pieces; do not puree.
  • In large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, Mozzarella, Ricotta, salami and 2 tablespoons bread crumbs for topping.
  • Add salt and pepper.
  • Pour into prepared dish.
  • Sprinkle with remaining Parmesan cheese and bread crumbs.
  • Cover with foil and bake 30 minutes.
  • Remove foil; bake 20 to 30 minutes longer or until browned.
  • Serve hot.
  • Makes 6 to 8 servings.
