- 1/2 c. plus 4 Tbsp. seasoned dry bread crumbs, divided
- 1 head cauliflower, cut into flowerets
- water
- 2 eggs, beaten
- 1/2 c. plus 2 Tbsp. grated Parmesan cheese, divided
- 1 (8 oz.) pkg. Mozzarella, diced
- 1 (15 oz.) Ricotta cheese
- 2 oz. hard salami, diced
- ground pepper to taste
- 1/2 tsp. salt or to taste
Method
- Preheat oven to 350°.
- Grease 12 x 8-inch baking dish. Sprinkle lightly with 1/2 cup bread crumbs.
- In large saucepan over medium-high heat, bring cauliflowerets and enough water to a boil.
- Cook 10 minutes or until tender.
- Drain; with fork crush cauliflower into smaller pieces; do not puree.
- In large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, Mozzarella, Ricotta, salami and 2 tablespoons bread crumbs for topping.
- Add salt and pepper.
- Pour into prepared dish.
- Sprinkle with remaining Parmesan cheese and bread crumbs.
- Cover with foil and bake 30 minutes.
- Remove foil; bake 20 to 30 minutes longer or until browned.
- Serve hot.
- Makes 6 to 8 servings.
