Ingredients

  • 7 Tbsp. cornstarch
  • 1 1/2 c. sugar
  • 1 1/2 c. hot water
  • 1/2 c. lemon juice
  • 3 egg yolks
  • 1/4 tsp. salt
  • 2 Tbsp. butter

Method

  • Mix cornstarch, sugar and salt thoroughly in saucepan.
  • Add hot water and cook over high heat, stirring constantly, until thick and clear.
  • Remove from stove; add beaten egg yolks.
  • Return to stove and cook at low heat, stirring constantly for 6 minutes. Take off stove and add lemon juice and butter.
  • Cool.
  • Pour into cooled baked pastry shell.
  • Top with meringue.
