Ingredients

  • 2 lb. haddock
  • 2 oz. diced salt pork
  • 2 onions, diced
  • 1 c. chopped celery
  • 1 bay leaf, crumbled
  • 1 tsp. salt and pepper
  • 1 qt. milk
  • 2 Tbsp. butter
  • 4 large potatoes, diced

Method

  • Simmer haddock in 2 cups water for 15 minutes.
  • Drain; reserve broth.
  • Remove bones from fish.
  • Saute diced pork until crisp.
  • Remove and set aside.
  • Saute onions in pork fat until golden brown.
  • Add fish, potatoes, celery, bay leaf, salt and pepper.
  • Pour in fish broth plus enough water to make 3 cups liquid.
  • Simmer 30 minutes.
  • Add butter and milk.
  • Simmer 5 minutes.
  • Serve sprinkled with diced pork.
  • Serves 6.
