Ingredients
- 2 lb. haddock
- 2 oz. diced salt pork
- 2 onions, diced
- 1 c. chopped celery
- 1 bay leaf, crumbled
- 1 tsp. salt and pepper
- 1 qt. milk
- 2 Tbsp. butter
- 4 large potatoes, diced
Method
- Simmer haddock in 2 cups water for 15 minutes.
- Drain; reserve broth.
- Remove bones from fish.
- Saute diced pork until crisp.
- Remove and set aside.
- Saute onions in pork fat until golden brown.
- Add fish, potatoes, celery, bay leaf, salt and pepper.
- Pour in fish broth plus enough water to make 3 cups liquid.
- Simmer 30 minutes.
- Add butter and milk.
- Simmer 5 minutes.
- Serve sprinkled with diced pork.
- Serves 6.
