Ingredients
- 1 lb. light brown sugar
- 14 oz. can sweetened condensed milk
- 1 c. pecan halves
- 2 tsp. vanilla
Method
- Cover 2 cookie sheets with waxed paper; set aside.
- Use a wooden spoon to mix brown sugar and milk in a 2-quart glass container.
- Stir well to make sure there are no lumps which tend to burn during microwaving.
- Add pecans.
- Microwave on High for 6 minutes; stir.
- Then microwave on High 3 to 4 minutes or until the mixture reaches 240° on a candy thermometer (the soft ball stage). To test, drip some candy mixture into a cup of ice water.
- It should form a soft ball when pressed between the fingers.
- Use the wooden spoon to beat the mixture about 3 minutes or until it begins to thicken slightly.
- Quickly drop mixture by tablespoonfuls onto the prepared waxed paper, making sure that each praline includes about 3 pecan halves.
- Let harden completely before pulling off paper.
- Store them in an airtight container.
- Yields 24 pralines, 110 calories each.
