Ingredients

  • 1 lb. light brown sugar
  • 14 oz. can sweetened condensed milk
  • 1 c. pecan halves
  • 2 tsp. vanilla

Method

  • Cover 2 cookie sheets with waxed paper; set aside.
  • Use a wooden spoon to mix brown sugar and milk in a 2-quart glass container.
  • Stir well to make sure there are no lumps which tend to burn during microwaving.
  • Add pecans.
  • Microwave on High for 6 minutes; stir.
  • Then microwave on High 3 to 4 minutes or until the mixture reaches 240° on a candy thermometer (the soft ball stage). To test, drip some candy mixture into a cup of ice water.
  • It should form a soft ball when pressed between the fingers.
  • Use the wooden spoon to beat the mixture about 3 minutes or until it begins to thicken slightly.
  • Quickly drop mixture by tablespoonfuls onto the prepared waxed paper, making sure that each praline includes about 3 pecan halves.
  • Let harden completely before pulling off paper.
  • Store them in an airtight container.
  • Yields 24 pralines, 110 calories each.
