Ingredients

  • 2 Tbsp. Instant Coffee in 1/4 cup Boiling Water (or 1/4 cup Kahlua)
  • 32 Nilla Wafers
  • 8 oz. reduced-fat Cream Cheese
  • 1/4 cup Powdered Sugar
  • 8 oz. Whipped Topping, thawed (Cool Whip)
  • 1 tsp. unsweetened cocoa powder
  • 1 cup fresh raspberries (optional)

Method

  • Stir coffee granules (if using) into boiling water until dissolved. Cover bottom of 8-inch square dish with wafers. Drizzle with 1 tbsp. coffee (or Kahlua).
  • Add 2 tbsp. of the remaining coffee gradually to reduced fat cream cheese in medium bowl, beating with whisk until blended. Add sugar; mix well. Stir in whipped topping. Spoon half of mixture over wafers in dish. Cover with remaining wafers. Drizzle with remaining coffee. Top with remaining cream cheese mixture.
  • Refrigerate overnight. Top with raspberries just before serving (optional); Sprinkle with cocoa powder.
