Ingredients
- Dressing
- 2 tablespoons sour cream
- 175 g (6 oz) can mango purée
- 3 tablespoons lime juice
- 1 tablespoon sweet chilli sauce
- 6 bacon rashers, chopped
- 2 kg (4 lb 8 oz) cooked king prawns (shrimp), peeled and deveined, with the tails intact
- 3 large mangoes, peeled and cut into thin wedges
- 2 large avocados, sliced
Method
1. To make the dressing, combine all the ingredients in a small bowl and whisk until smooth.
2. Fry the bacon until crispy, then drain on paper towels.
3. Arrange the prawns, mango and avocado on a large platter, then sprinkle with the bacon bits. Drizzle with the dressing, then serve.
