Ingredients

  • 1 kg (2 lb) cooked medium prawns
  • 1 cup (250 ml/8 fl oz) cocktail sauce
  • lettuce, for serving
  • lemon wedges, for serving
  • sliced bread, for serving

Method

1. Peel the prawns and pull out the dark vein from each prawn back, starting at the head end.

2. Reserve some prawns to use as a garnish. Remove the tails from the remaining prawns and add to the cocktail sauce. Mix gently to coat the prawns in the sauce.

3. Arrange the lettuce in serving dishes or bowls. Spoon some prawns into each dish. Garnish with the reserved prawns. Serve with lemon wedges and bread.
