Ingredients

  • 1 tablespoon finely chopped fresh ginger
  • 1 clove garlic, finely chopped
  • 1/3 cup (80 ml) rice wine vinegar
  • 1 teaspoon sugar
  • 2 teaspoons sesame oil
  • 1/3 cup (80 ml) Japanese or light soy sauce
  • 250 g dried soba noodles
  • 400 g cooked, peeled and deveined medium prawns 
  • 1 small red capsicum, julienned
  • 4 spring onions, sliced diagonally
  • 1 tablespoon sesame seeds, toasted

Method

1. Place the ginger, garlic, vinegar, sugar, sesame oil, soy sauce and 1/4 teaspoon freshly ground black pepper and 1/2 teaspoon salt in a small bowl and combine well.

2. Bring a large saucepan of lightly salted water to the boil. Add the noodles and cook for 4–5 minutes, or until just tender. Rinse under cold water, drain and place in a large bowl with the prawns, capsicum, spring onion and dressing. Toss to combine and season to taste with salt and freshly ground black pepper. Evenly divide the salad among four serving bowls and sprinkle with the toasted sesame seeds.
