- 1 lb. lean ground beef
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 1 green pepper, finely chopped
- 3 or 4 (8 oz.) cans tomato sauce or 3 cans tomato sauce and 1 c. spaghetti sauce
- 1 lb. small curd cottage cheese (regular or fat-free)
- 5 c. wide, cooked noodles (cholesterol-free, if desired)
- 1 tsp. basil
- 1 tsp. oregano
- 1 tsp. parsley
- 1 tsp. salt (optional)
- 1 tsp. sugar or Sweet 'N Low (optional)
- 1/2 c. Parmesan cheese (sprinkled on top)
- 8 oz. Mozzarella cheese, shredded
Method
- Brown ground beef in oil; add onion and green pepper.
- Saute 5 to 10 minutes; drain.
