Ingredients

  • 1 lb. lean ground beef
  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 green pepper, finely chopped
  • 3 or 4 (8 oz.) cans tomato sauce or 3 cans tomato sauce and 1 c. spaghetti sauce
  • 1 lb. small curd cottage cheese (regular or fat-free)
  • 5 c. wide, cooked noodles (cholesterol-free, if desired)
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1 tsp. salt (optional)
  • 1 tsp. sugar or Sweet 'N Low (optional)
  • 1/2 c. Parmesan cheese (sprinkled on top)
  • 8 oz. Mozzarella cheese, shredded

Method

  • Brown ground beef in oil; add onion and green pepper.
  • Saute 5 to 10 minutes; drain.
