Ingredients

  • 1 onion, chopped
  • 1/4 c. butter or margarine
  • 4 c. water
  • 3 lb. potatoes, peeled and cubed
  • 1 stalk celery, chopped
  • salt to taste
  • 1 Tbsp. pepper
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. butter, softened
  • 1/4 c. plus 2 Tbsp. flour
  • 1 egg, beaten
  • 1/4 tsp. salt
  • dash of ground nutmeg
  • 1/2 c. sour cream

Method

  • Saute onion in 1/4 cup butter in large saucepan until tender. Add water.
  • Bring to a boil.
  • Add potatoes, celery, salt to taste, pepper and parsley.
  • Reduce heat.
  • Simmer for 15 minutes.
