- 1 onion, chopped
- 1/4 c. butter or margarine
- 4 c. water
- 3 lb. potatoes, peeled and cubed
- 1 stalk celery, chopped
- salt to taste
- 1 Tbsp. pepper
- 2 Tbsp. chopped parsley
- 2 Tbsp. butter, softened
- 1/4 c. plus 2 Tbsp. flour
- 1 egg, beaten
- 1/4 tsp. salt
- dash of ground nutmeg
- 1/2 c. sour cream
Method
- Saute onion in 1/4 cup butter in large saucepan until tender. Add water.
- Bring to a boil.
- Add potatoes, celery, salt to taste, pepper and parsley.
- Reduce heat.
- Simmer for 15 minutes.
