- 1 large onion, chopped
- 1/2 c. fresh mushrooms, sliced
- 1 Tbsp. olive oil
- 3 large potatoes, peeled and sliced (about 4 c.)
- 1 large can beef broth (14 1/2 oz.)
- 1 large can chicken broth (14 1/2 oz.)
- 1/2 c. buttermilk
- 1 Tbsp. cornstarch
- 1 Tbsp. fresh basil, chopped or 1 tsp. dried
- 1/4 c. Canadian bacon, chopped (about 2 slices)
- 1/4 c. plain low-fat yogurt (optional)
Method
- In deep saucepan, cook onion and mushrooms in hot oil until tender and lightly browned.
- Add potatoes, beef and chicken broth; bring to a boil, reduce heat and cover.
- Simmer 35 to 45 minutes until potatoes are tender.
