Ingredients

  • 1 large onion, chopped
  • 1/2 c. fresh mushrooms, sliced
  • 1 Tbsp. olive oil
  • 3 large potatoes, peeled and sliced (about 4 c.)
  • 1 large can beef broth (14 1/2 oz.)
  • 1 large can chicken broth (14 1/2 oz.)
  • 1/2 c. buttermilk
  • 1 Tbsp. cornstarch
  • 1 Tbsp. fresh basil, chopped or 1 tsp. dried
  • 1/4 c. Canadian bacon, chopped (about 2 slices)
  • 1/4 c. plain low-fat yogurt (optional)

Method

  • In deep saucepan, cook onion and mushrooms in hot oil until tender and lightly browned.
  • Add potatoes, beef and chicken broth; bring to a boil, reduce heat and cover.
  • Simmer 35 to 45 minutes until potatoes are tender.
