Ingredients
- 6 slices bacon, diced
- 2 c. potatoes, diced and cooked
- 1 medium onion, diced
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 eggs, beaten
Method
- Fry bacon until crisp; drain off all but 3 tablespoons fat. Cook and stir potatoes, onion, salt and pepper in fat until browned.
- Pour eggs in skillet.
- Cook uncovered until eggs are thickened.
- Serves 4. (Substitution:
- Cooked potatoes is equal to 1 (9-ounce) package of frozen French fried potatoes, diced.)
