Ingredients

  • 6 slices bacon, diced
  • 2 c. potatoes, diced and cooked
  • 1 medium onion, diced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 4 eggs, beaten

Method

  • Fry bacon until crisp; drain off all but 3 tablespoons fat. Cook and stir potatoes, onion, salt and pepper in fat until browned.
  • Pour eggs in skillet.
  • Cook uncovered until eggs are thickened.
  • Serves 4. (Substitution:
  • Cooked potatoes is equal to 1 (9-ounce) package of frozen French fried potatoes, diced.)
