Ingredients

  • 180 grams All-purpose Flour
  • 20 grams Unsweetened Cocoa Powder
  • 30 grams Desiccated Coconut
  • 3 whole Eggs
  • 150 milliliters Vegetable Oil
  • 50 grams Honey
  • 100 grams Dark Chocolate, Roughly Chopped
  • 50 grams Almonds
  • 50 grams Sugar
  • 10 milliliters Rum Extract Or Rum

Method

  • Sift the flour with the cocoa powder.
  • Add the coconut and stir to combine.
  • In another bowl, whisk the eggs with the wire whisk.
  • Add the oil, honey, roughly chopped chocolate and almonds.
  • Combine, and then add the rest of the ingredients.
  • Pour the batter into a baking dish (mine was 23x30 cm) lined with baking paper, and bake in a preheated oven, at 180 degrees C (355 degrees F), for about 20-25 minutes (mine were done after 23 minutes).
  • Make sure you test for doneness with a toothpick, and do not overbake them.
  • Serve with milk or black coffee.
