Ingredients
- 6 large potatoes
- 2 eggs
- 1 small onion
- 1/2 c. flour
- salt to taste
Method
- Grate potatoes very fine.
- Mix other ingredients with potatoes.
- Fry in olive oil in hot skillet until brown.
- One tablespoon of batter makes nice sized pancake.
- Serves five. Leftover pancakes can be frozen and reheated.
